EZ RAINBOW BOWL

Ingredients

2 cups purple cabbage, thinly sliced

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup radish, thinly sliced

1 cup shredded carrots

2 cups arugula or mixed greens

1/4 cup fresh basil leaves, torn

2 tablespoons lemon juice

2 tablespoons extra-virgin olive oil

1 tablespoon maple syrup or sweetener of choice

Salt and pepper to taste

Optional toppings: toasted walnuts, vegan feta cheese, balsamic glaze, walnut butter


Preparation

In a large salad bowl, combine the purple cabbage, cherry tomatoes, cucumber, radish, shredded carrots, arugula or mixed greens, and torn basil leaves.


In a separate small bowl, whisk together the lemon juice, olive oil, maple syrup, salt, and pepper to make the dressing.


Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
