Omelettes are hard. There’s nothing quite like the satisfaction of getting perfect flip in the pan. However, sometimes you’re just not willing to take the risk, so you make a frittata instead, the answer to which means you just throw the stuff in a pan in the oven and you basically have a hands free omelette. An omelette pizza, if you will.
JUST egg has thoroughly revolutionized plant based eating and it’s so exciting to have such a versatile ingredient come to the vegan scene. If you're reallllly pressed for time, they also make pre-made omelette folds, which are linked in the notes below.
Let this recipe be your magic solution to the omelette scaries. Use whatever veggies you have on hand like mushrooms, tomatoes, onions, spinach, basil, parsley, peppers - possibilities are endless here. Or go the less traditional route and try fennel, carrots, zucchini, artichoke, leeks, sage - you get the idea.
If you elect to use vegan cheeze, add it in before baking or crumble on top. Nutritional yeast would be great here too.

Ingredients
1 bottle (12 ounces) JUST Egg
1 cup cherry tomatoes, halved
1/2 cup onion, diced
1/2 cup bell peppers, diced
1/2 cup mushrooms, sliced
Salt and pepper to taste
1 tablespoon olive oil or avocado oil
Vegan cheese or nutritional yeast (optional)
Fresh herbs for garnish (optional)
Preparation
Preheat your oven to 375°F (190°C).In a large oven-safe skillet, heat the olive oil in a large oven-safe skillet, heat the olive oil over medium heat.Add the onions, bell peppers, and mushrooms to the skillet. Sauté for about 5 minutes until the vegetables are tender.
In a separate bowl, whisk the contents of the bottle of JUST egg.
Pour the whisked JUST egg mixture into the skillet with the sautéed vegetables. If using vegan cheese or nutritional yeast, gently fold into the JUST egg/veggie mixture.
Arrange the cherry tomato halves evenly on top of the egg mixture. Season with salt and pepper to taste.
Transfer the skillet to the preheated oven and bake for 15-20 minutes until the frittata is set and slightly golden on top.
Remove from the oven and let it cool for a few minutes. Garnish with optional herbs and/or vegan cheese crumbles, cut the frittata into slices, and serve warm.
