Oatmeal cookies are nostalgic and comforting just like a chai latte with oat milk. Have the best of both worlds with these warm oatmeal chai cookies made with craisins. Aromatic chai spices, including cinnamon, cardamom, ginger, cloves, and star anise are the key to that deep, fragrant flavor, and the tangy sweetness of craisins helps to balance it out.
You can use coconut oil or vegan butter, both will work, depending on the flavor you're trying to achieve. Rolled oats instead of quick oats will provide a slightly crunchier texture while quick oats will give you a bit more chew. Either will do. These can easily be made gluten free with any gluten free flour designed for baking.

Ingredients
1 ½ cups rolled oats
1 cup all-purpose flour (or use a gluten-free flour blend for a gluten-free option)
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cardamom
½ teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon ground star anise
½ cup coconut oil or vegan butter, melted
½ cup morena sugar
¼ cup maple syrup or agave nectar
1 teaspoon vanilla extract
½ cup craisins (or substitute with raisins or other dried fruits)
Preparation
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, flour, baking powder, baking soda, salt, cinnamon, cardamom, ginger, cloves, and star anise. Mix well to ensure the spices are evenly distributed throughout the dry ingredients.
In a separate bowl, whisk together the melted coconut oil or vegan butter, brown sugar, maple syrup or agave nectar, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix until a dough forms. Fold in the craisins, ensuring they are evenly distributed throughout the dough.
Using a tablespoon or cookie scoop, drop rounded portions of dough onto the prepared baking sheet. Gently flatten each portion with the back of a spoon or your fingers to create cookie shapes.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Once cooled, store the cookies in an airtight container to maintain their freshness.
