I love using fruits and vegetables to recreate traditional dishes. And while the pineapple alone won't satisfy your daily protein quota, it will be fresh, delicious alternative meal that can easily be paired with countless dishes. I also love to add pineapple whenever possible because of its bromelain - an enzyme that supercharges digestive and gut health.

The marinade plays a crucial role in elevating the taste of the pineapple, as well as giving it the desired caramel color. A blend of tangy lime juice, savory soy sauce (or tamari for a gluten-free option), a touch of hot sauce to counterbalance the sweetness, and a hint of smokiness from paprika creates a harmonious balance of flavors. The marinade infuses the pineapple with a tangy-spicy profile that perfectly complements its natural juiciness.

Grilling the marinated pineapple slices adds a lovely smoky char and caramelization, intensifying their natural sweetness. The heat brings out the pineapple's juices, creating a succulent and tender texture with a slightly caramelized exterior.

Ingredients

1 ripe pineapple

1/4 cup lime juice

2 tablespoons soy sauce or tamari or coconut aminos

1 tablespoon hot sauce

1/2 teaspoon smoked paprika

Fresh cilantro or mint leaves for garnish

Preparation

Preheat your grill to medium-high heat.


Prepare the pineapple by removing the skin and slicing it into thick, round "steaks," about 1/2 to 3/4 inch in thickness.


In a bowl, whisk together lime juice, soy sauce (or tamari or coconut aminos), hot sauce, and smoked paprika to create the marinade.


Place the pineapple "steaks" in a shallow dish or a resealable bag, and pour the marinade over them. Make sure each slice is well-coated. Allow them to marinate for about 30 minutes, flipping them halfway through to ensure even flavor absorption.


Once the grill is hot, lightly oil the grates to prevent sticking. Place the marinated pineapple "steaks" onto the grill, reserving the leftover marinade for basting.


Grill the pineapple for 4-5 minutes on each side, or until grill marks appear, and the pineapple caramelizes slightly.


During the grilling process, brush the pineapple with the leftover marinade to enhance the flavors.


Once the pineapple "steaks" are nicely grilled, remove them from the heat and transfer to a serving platter.


Garnish with fresh cilantro or mint leaves for an extra touch of freshness.


Serve hot with favorite sides and condiments.
