SCHOOL NITE BURGERZ

About the Recipe

sometimes you just gotta go classic. growing up there were always a few staples in rotation for dinner on school nights, and quick, basic burgers were one of them.

this recipe is therefor meant to be super simple and nostalgic, but with a plant based tweak. here we're taking chopped mushrooms and artichokes and making them into patties and grilling them up so that the edges get nice and crispy and caramelized.

you'll also need bread crumbs and season it to taste using fresh garlic and onion, parsley, nutritional yeast, some soy sauce or coconut aminos, and salt and pepper.

add a slice of vegan cheese right before taking them off the skillet and layer with tomatoes, lettuce, pickles, or whatever your heart desires.

SCHOOL NITE BURGERZ

Ingredients

8 ounces mushrooms, finely chopped

1 can artichoke hearts, drained and chopped

1 cup breadcrumbs (gluten-free if desired)

1/4 cup finely chopped onion

2 cloves garlic, minced

1/4 cup fresh parsley, finely chopped

2 tablespoons nutritional yeast (optional)

1 tablespoon soy sauce or tamari

1 tablespoon olive oil

Salt and pepper to taste

Vegan cheese slices (optional)

Burger buns and toppings of your choice (lettuce, tomato, onion, pickles, etc.)


Preparation

Preheat your skillet or grill pan over medium-high heat.


In a large mixing bowl, combine the chopped mushrooms, chopped artichoke hearts, breadcrumbs, onion, garlic, parsley, nutritional yeast (if using), soy sauce or tamari, olive oil, salt, and pepper. Mix well until all the ingredients are evenly combined.


Shape the mixture into 4 patties, pressing firmly to ensure they hold together.


Place the patties on the preheated skillet or grill pan. Cook for about 6-8 minutes on each side, until they are golden brown and firm. Add a slice of cheese just before taking off the heat (optional).


While the patties are cooking, lightly toast the burger buns on the grill if desired.


Once the patties are cooked, remove them from the grill and let them cool for a few minutes.


Assemble your burgers by placing on the bottom half of each bun. Add your desired toppings such as lettuce, tomato, onion, and pickles.


Cover with the top half of the bun and serve the Grilled Mushroom and Artichoke Patties immediately.



Notes:

Feel free to adjust the seasonings and spices according to your taste preferences.

Serve the burgers with a side of sweet potato fries or fresh salad.
